I just made my first-ever loaf of zucchini bread, because a friend of mine said she had some and enjoyed it, and because I have a lot of garden zucchini here. Now, don't get me wrong: I just tasted the loaf and it is, indeed, good. However, I don't see why zucchini is an ingredient at all. I certainly don't taste it: this and almost every zucchini bread recipe I saw are heavy on the sugar, spices, nuts, etc., so they taste like whatever spices you put in, not like zucchini. What is the zucchini actually adding? When I make banana bread--which is almost the same recipe--it tastes like bananas. But why do people make zucchini into a bread? New to Chowhound? Zucchini bread: why?
